This tasted good and was very easy! I replaced most of the corn with zucchini to lower carbs. Cooked the green onions in a skillet with the zucchini to brown, added the shallots to let them cook a bit, and then added the rest of the ingredients off the heat. And I left out the extra olive oil; that sounded unnecessary to me. (Picture by me, linked to original recipe)
